Simple Shallot Vinaigrette

This shallot vinaigrette is so flavorful, easy to make, and versatile. Use it on anything from salads, to grain bowls, to roasted veg to cooked proteins, and so much more!

Ingredients
¼ cup + 2
tbsp
extra virgin olive oil

tbsp
apple cider vinegar
1
tbsp
fresh lemon juice
½
tbsp
dijon mustard
½
tbsp
raw honey
2
tbsp
shallot, finely minced
½
tsp
dried chives (optional)
salt & pepper, to taste
Instructions
Add the diced shallot along with the rest of the ingredients and add to a mason jar with a tightly sealed lid.
Shake the jar vigorously until the dressing is well combined.
Store in the fridge for up to 2 weeks. Shake before using to re-emulisfy the dressing.
Notes
This recipe makes about 2/3 cup of vinaigrette.
