⅓cupbrown sugar, coconut sugar, or organic cane sugarsee notes
¼cupvegan butteror coconut oil
½teaspoonground cinnamon
¼teaspoonkosher salt
Instructions
Preheat your oven to 350°F.
Peel the apples and remove the core before cutting them lengthwise into slices.
Add the sliced apples to a large bowl along with the maple syrup, cinnamon, lemon juice, and vanilla extract. Mix until everything is evenly coated and then transfer to a greased 8x8 baking dish.
Mix all of the crumb topping ingredients in a medium bowl and use your hands or a pastry cutter to crumble the mixture together until it resembles pea-sized crumbs.
Spread the topping evenly over the apples and bake for 40-50 minutes or until golden brown. Serve with a scoop of your favorite vegan vanilla ice cream or dairy free whipped cream.
Notes
When choosing your apples, opt for a couple of different varieties if you can. This will yield the best overall flavor. I like to use a combination of granny smith and Honeycrisp apples, but you can use whatever varieties you like. You can use any type of granulated sugar, but because brown sugar contains the most moisture, it works incredibly well in fruit crisp desserts.
