Edible cookie dough bites come together in under 10 minutes and are a great no bake dessert. This customizable recipe has just 5 ingredients and is naturally gluten free, dairy free, and vegan with a nut free option.
In a medium bowl or the bowl of a stand mixer, mix all the ingredients together except for the mini chocolate chips until well combined.
Fold in the chocolate chips with a rubber spatula. Use a small cookie scoop or a spoon to roll the dough into bite-sized balls.
Transfer the balls of cookie dough to a baking sheet or plate lined with parchment paper.
Sprinkle with flaky salt if desired. Place in the fridge for about 10 minutes to chill and firm up (optional)

How to store: Once chilled, transfer the cookie dough bites to an airtight container or ziploc bag and store them in the fridge for up to 1 month or in the freezer for up to 3 months.

No oat flour? – blend 2/3 cup of rolled oats in a high-powered blender or food processor until they're broken down into fine flour (you may have a little extra).
No tahini? - use sunflower seed butter to keep this recipe nut free. If not nut free, you can also use cashew butter, peanut butter, or almond butter. Just make sure whatever you use is runny or well stirred, otherwise, it can affect the texture.No maple syrup? - you can use granulated sugar, but you may have to add a little vegan milk to get the right consistency.
