This apple mug cake is a quick and easy single serving dessert that takes less than 5 minutes from start to finish. This recipe is dairy-free, vegan (no eggs needed), and can easily be made gluten-free.

  • In a microwave-safe mug (no less than 10 ounces) or mason jar, mix together the dry ingredients.
  • Then add in your milk of choice, melted butter, brown sugar, lemon juice, and vanilla extract. Mix well until completely combined and then fold in the diced apple. The cake batter will be thick and should only fill up about half of a 10-ounce mug, or else it could overflow in the microwave.
  • Microwave on high for 1 minute and 30 seconds. Serve with a little whipped cream, vanilla ice cream, or even miso caramel if desired.

Notes

SUBSTITUTIONS:
No apples? – use pear, persimmon, or grated zucchini instead.
No brown sugar? - use another type of granulated sugar such as coconut, organic cane sugar, or white sugar, but you may need to add an additional splash of milk since brown sugar has more moisture.
Make it gluten-free - use gluten-free all-purpose flour. I love the King Arthur brand.
