Homemade Strawberry Italian Cream Soda (dairy-free)

Ingredients
 

  • cups hulled strawberries or fruit of choice
  • 2 tablespoons sweetener organic cane sugar, raw honey, or maple syrup
  • ½ cup dairy-free milk oat or canned coconut milk
  • Club soda or sparkling water
  • Handful of ice

Instructions

  • Add fruit to a blender with sweetener and blend until it's pureed. If your blender isn't powerful enough, you may need to add a little water to get it going. Taste and adjust sweetness as needed.
  • In each glass, put the desired amount of ice, 2 to 3 tablespoons of the fruit puree, fill ¾ of the way with sparkling water and top off with 2 to 3 tablespoons of dairy-free milk.
  • Mix with a spoon to incorporate before drinking.
  • Serves about 4.

Notes

If you follow the amounts above, you'll have some leftover puree. You can store the excess fruit puree in a sealed container in the fridge for up to 5 days.
Other ideas of how to use the leftover fruit puree: add it to oatmeal, baked goods, toast, smoothies, or make more Italian cream sodas a few days from now.
