Serving Size 4

Ingredients

  • 1 pound salmon, bones and skin removed
  • 2 tablespoons olive oil, divided

BBQ Spice Mix

Sweet Chili Mustard (Optional)

  • 2 tablespoons raw honey
  • 2 teaspoons dijon mustard
  • ½ - 1 teaspoon sriracha, optional

Instructions

  • Mix together the coconut sugar, smoked paprika, garlic powder, onion powder, chili powder, salt, and pepper in a bowl. Set aside.
  • Cut the salmon into 1.5-inch cubes and add to a bowl along with one tablespoon of the olive oil and the spice mixture. Thoroughly mix everything together.
  • Heat a cast iron skillet over medium heat and add the remaining tablespoon of oil. Once hot, add in the seasoned salmon cubes and arrange in a single layer. Cook on one side for 4 minutes, flip over and cook another 2-3 minutes, depending on preference of doneness.
  • While the salmon cooks, mix together the sauce ingredients in a bowl. Don't like spicy things? Leave out the sriracha for a delicious honey mustard instead.

Notes

Top tip: Don’t worry about the cubes being perfect. Fillets can vary quite a bit in thickness, so just keep on an eye on them while they cook, removing the thinner pieces from the pan a minute or two early.
